I've always loved a good garlic bread, especially with homemade pasta dishes. With butter being off the menu, I found it really simple to replace it with the non-dairy equivalent (Vitalite for the win!), and still have an excellent flavour.

This is one of the simplest recipes out there, but I add a little chilli for a spicy kick.

 

ingredients

A large ciabatta loaf
3 tablespoons of dairy free butter, plus extra for greasing
2 cloves of garlic, thinly sliced
1/2 teaspoon dried rosemary
1/2 teaspoon dried basil
1/2 teaspoon dried chili flakes (optional)

method

First things first, grease a large baking tray with dairy free spread and preheat the oven to 180°c/350°F/Gas Mark 4.
Slice your bread into medium slices. Set aside.
Fry the garlic gently over a medium heat until softened. Turn down the heat as low as you can.
Add the butter and herbs. Stir to combine well.
Keep on the heat, but don't allow the butter to burn. Heat for a couple of minutes.
Drizzle on to your bread, Coat it evenly.
Stick it in the oven for 10 minutes or until the bread has crisped up.
Serve immediately.
